Assuming you want to keep the steering wheel in approximately the same position to yourself, you'll be looking for a slimline boss as well as the quick release. For the quick release, I'd recommend sticking to the main motorsport manufacturers like OMP, Sparco, etc. Personally I prefer the "Group N" design releases. I used an OMP for a long while, which was useful in that it didn't have the typical splines (in which it's easy to put your steering wheel back on off-center), but rather a unique shape that meant it could only go on dead-center. Quality product too. Got it from Rallynuts, who are great to deal with. Actually, I might even still have it in the garage. Will see if I can find some pics.
Your other consideration with a quick release is your horn. If you want/need it on the steering wheel, you'll also need to sort out your wiring and connectors for that. No point have a quick release steering wheel if you've still got to fluff about with wiring every time you take it on or off.
